Endemic to Western Australia, the snow crab is found at depths of 500-800 metres below the surface. The crab's thin shell, sweet taste and substantial size make it very appealing to chefs and diners alike. One of the features of this species of crab is that it's shell remains white after cooking unlike most other crustaceans.

Smaller in stature than their southern cousins, Western Rock lobsters are identifiable by the white dots along their tails. They are found in temperate waters along Australia's west coast.

Unlike their western and southern counterparts, Eastern Rock lobsters have a dark green-black shell. They inhabit cooler waters off the eastern seaboard and have medium-firm flesh, with a sweet rich flavour.

Live Baby Green Tiger Abalone

Green tiger abalone is a cultivated hybrid between wild Blacklip and Greenlip abalone. Their shells have a distinct green colouring with dark stripes. Abalone are tender and have a rich buttery, umami flavour.

Blacklip are the most common species of abalone in Australia. Found in the colder waters of Australia's southern states, they are regarded to have better 'abalone' flavour than Greenlip.

Greenlip abalone are distinguishable by their smoother shells and bright green coloured lips or frills. They have a milder flavour then their Blacklipped counterparts, but their impressive size and appearance make them much sought after.

Blood cockles garner their name from the bright red liquid they release when opened. This redness is attributed to the high levels of hemogloblin produced by this mollusc. Although their appearance might be off-putting, they have a clean, crisp flavour to them.

Although they are often neglected as a seafood source, these edible sea snails pack plenty of punch. With a profile that embodies a mix of flavours and textures, most often compared as a mix between abalone and mussels, periwinkles are well served steamed or boiled.

Pipis are a surf clam that are abundant on sandy beaches along Australia's south-eastern coastlines. Their shells are bright and can come in a range of colours. Pipis have a strong, rich flavour, medium oiliness and moist, firm flesh.

There are many producers that grow these mussels in intertidal waters throughout Australia's southern seaboard. Blue mussels are often harvested after 12-18 months and are plump, sweet and delicious.

King prawns have a reputation for being the best Australian prawn. These ocean prawns are trawled and snap frozen for optimal freshness, have a rich flavour, low-medium oiliness, moist flesh and medium-firm texture.

Brown tiger prawns are endemic to Australia and are trawled all year round on the north-east and western coastlines. Tiger prawns have a sweet, medium flavour, low to medium oiliness and moist, firm flesh.

Commercial scallops are distinguished by the pinky-red markings and ridges that rub along their shells. They are dived and dredged for in most of Australia's southern states. Unlike saucer scallops, the roe is usually left attached.

Patagonian toothfish are a deep-water species that inhabits waters on seamounts and continental shelves. They are found at depths of 50‑3000 metres. This fish  has snow-white flesh and broad scalloping flakes with a clean, sweet flavour. The balance of flavour and texture in Glacier 51 toothfish has a culinary versatility that is rarely matched in other fish species.

Paradise Prawns from New Caledonia are one of the sweetest prawns in the market. These prawns have a deep blue colour with a soft shell and tender flesh. The prawns are blast frozen within hours of harvest to preserve their incredible texture and flavour.

Sea urchin roe, or Uni, is very sweet, creamy, and soft in texture. Harvesting is seasonal and dependent on location. Divers carefully hand-pick and grade urchins based on size and quality before cleaning and processing them into roe.

As sea urchins are rich in sugar, salt, and amino acids, they have a umami-salty sweetness to them. They often taste like the seaweed they eat. All good urchins should have a buttery, melt-in-your-mouth texture and a rich, distinctive flavour that has been compared to eggs, lobster, foie gras, and fish roe.
